🤨I know what you’re thinking.  Tofu in a pie?! I thought the same thing when deciding whether or not to try this recipe.  I AM SO GLAD I DID!! It is delicious🤤!

Why is it delicious?  The consistency is perfect; lighter than a cheesecake, but more dense than pudding.  The bittersweet chocolate gives it richness.  The almond crunch from our crust…say no more.  I also love the protein from the Tofu, and no added granulated sugars (like conventional pie recipes call for). You’ll enjoy your piece of pie with a little more peace of mind.

Crust:
1, RAF Almond Nut Pie Crust, pre-baked and cooled completely

Filling:
1 lb. soft tofu, drained then cut up (not the vacuum packed kind)
1/4 cup milk (use almond or coconut  milk for Vegan option)
1/4 cup Kahlua, coffee liquor
1 tsp. Vanilla
1/4 tsp. salt
1 bag, (10 oz) bittersweet chocolate chips, melted

Bake RAF Almond Nut Crust to instructions on package.  Let crust cool completely.

In a blender, add all ingredients listed above.  Blend together until smooth and silky. 

Pour into cooled almond crust. Refrigerate 1 hour or until you can’t wait any longer!  Top with regular whipped cream or Cocowhip by @so_delicious My favorite is the Cocowhip, it really is so delicious!

📣This past week, I had a pleasure and honor of being a guest speaker for SDCCD, San Diego College of Continuing Education, sharing my entrepreneurial insights!

Here are two things I’ve learned while growing my business!

1️⃣ Take as many small business courses as possible!  If enrolled in college, check your available classes.  If you’re not in college, check your Small Business Administration for available classes. Nothing like a slice of warm Blueberry Crisp Pie on a Sunday evening!  This delicious pie is prepared in our Almond Nut Crust that can be purchased @thefreshmarket near you.  This is my mom’s favorite pie and as our vacation comes to an end, I had to fulfill my Momma’s request! 

Our Almond Nut Pie Crusts are great with fruit pies, cream pies, and more!  Our crusts are Non-GMO certified, Gluten Free, Vegan and everything in between.  Found in your freezer section @thefreshmarket !

⬇️Recipe⬇️

Crust:
1 RAF Almond Nut Pie Crust, thawed

Filling:
1 10 oz. bag blueberries, frozen (roughly 2 cups)
1/4 cup sugar
2 Tbsp. all purpose flour
1 egg, lightly beaten
½ tsp. vanilla

Crumb Topping:
1/4 cup + 2 Tbsp. all purpose flour
1/4 cup brown sugar
3 tbsp. butter, cut into small cubes
Dash of cinnamon

Preheat oven to 425F. Mix together the pie filling ingredients and pour into thawed crust. In a bowl, combine the crumb topping ingredients with a fork until crumbly. Add to the top of pie.

Bake for 15 minutes at 425F then reduce heat to 350F and bake for another 30 minutes or until top is golden brown. Let cool for a bit, then serve warm. Top with vanilla ice cream!

Raw Natural Almonds (not almond flour!)
Coconut Oil
Flax Seed
Water
Cinnamon

We grind natural, raw almonds to a crumb consistency.  We keep the skins on!  This is where the powerful antioxidants of almonds are found.  These almonds make up 95% of our recipe. 

Pick your crust up @thefreshmarket found in the frozen section and use it the same way you’d use your Graham or Dough crust.  You can now enjoy your piece of pie with peace of mind!

This French Apple Tart prepared by @nongmoproject looked so good, I had to try this recipe myself!  I woke up first thing this morning in Pensacola and baked this French Apple Tart for my family.  It did not disappoint!  Gluten Free, simple, and easy - all thanks to @thefreshmarket for carrying our delicious and convenient Almond Nut Crusts!  Remember our pie crusts are only 5 ingredients and are @nongmoproject certified.  Grab yours for Thanksgiving before they are sold out! 

⬇️Recipe⬇️
1 RAF Almond Nut Crust, thawed. 
3 Apples, sliced thinly.  I used Honeycrisp
4 Tbsp. Sugar
4 Tbsp. Butter, cubed
Sprinkle of sea salt after baking, optional.

Preheat oven to 425F.  Let crust thaw while you prepare the apples.  Thinly slice apples.  Place in crust.  Sprinkle sugar on top of apples, then cubed butter.  Bake for 30-40 minutes or until you can insert a toothpick into apples.  Don’t overbook the apples.  Sprinkle with coarse sea salt if desired.  Let cool then slice through apples gently.  I recommend serving warm with ice cream.  Bon Appetite!

1 RAF Almond Nut Crust, thawed.
3 Apples, sliced thinly. I used Honeycrisp
4 Tbsp. Sugar
4 Tbsp. Butter, cubed
Sprinkle of sea salt after baking, optional.

Preheat oven to 425F. Let crust thaw while you prepare the apples. Thinly slice apples. Place in crust. Sprinkle sugar on top of apples, then cubed butter. Bake for 30-40 minutes or until you can insert a toothpick into apples. Don’t overbook the apples. Sprinkle with coarse sea salt if desired. Let cool then slice through apples gently. I recommend serving warm with ice cream. Bon Appetite!

Hello Pumpkin Cheesecake!  This two layer cheesecake recipe is a favorite of ours, so delicious, and would be great for your Thanksgiving dessert table🍁. Pick up our Almond Nut Crust @thefreshmarket near you and make this beautiful pie everyone will enjoy! 

Prep time is 5-10 minutes, then bake and chill.  You can also make this days ahead of Thanksgiving, freeze it, then set it out to thaw on Thanksgiving day.  Easy as pie! 😉

⬇️Recipe⬇️

Ingredients:
1 RAF almond nut crust, THAWED
2 (8 oz) packages cream cheese, softened.  You can also use reduced fat cream cheese.
1/2 cup white sugar
1 tsp vanilla extract
2 large eggs
1/2 cup pumpkin puree
1/2 tsp ground cinnamon
Dash of cloves (optional)

Preheat oven to 325 degrees. In a large bowl, beat on low cream cheese, sugar and vanilla until smooth. Blend in eggs one at a time. Remove 1 cup of the batter and spread into an unbaked Ruffled Apron Foods Almond Nut Crust.

Next, for the second layer, add pumpkin puree, cinnamon, and cloves (if using) to the remaining batter in mixing bowl and stir gently until well blended. Carefully spread over the batter in crust.  Bake in preheated oven for 35-45 minutes, or until center is almost set, center should shake slightly.  Allow to cool, then refrigerate for 3 hours or overnight.  If desired, top with whipped cream.

Candyland Pie

Crust
1 prebaked RAF Chocolate Almond Nut Pie Crust. (Our Signature crust sold @thefreshmarket works great too!)

Filling
1 lg. box cook & serve chocolate pudding
1/2 cup chopped Reese’s PB cups
1/2 cup mini marshmallows 
1/3 cup chopped Snickers
1/3 cup chopped Fudgy Brownies (I used Little Debbie brand, but any store brand or even homemade brownies are a great option) 

Garnish
Whipped Cream
Candy Corn 

To prepare crust, follow prebaking instructions on RAF packaging.  Let crust cool completely. 

For filling, follow directions on pudding box. Allow pudding to cool for 5 minutes, then mix in PB cups and marshmallows. 

To assemble the pie, layer the bottom of crust with snickers and brownies.  Pour the pudding mixture evenly over the pie.  Cover the pie tightly with plastic wrap and refrigerate for at least 3 hours. 

When ready to serve, remove plastic wrap and top with whipped cream.  Sprinkle with candy corn to keep it festive!

White Chocolate Raspberry Cheesecake
 
Ingredients:
RAF Almond Nut Crust, thawed
¾ cup white chocolate chips
¼ cup heavy cream
16 oz. cream cheese, softened
½ granulated sugar
2 Tbsp. sour cream
1 tsp. vanilla extract
2 eggs
 
Raspberry Puree:
1 bag frozen raspberries (12 oz)
1/3 cup water
2 Tbsp. granulated sugar
1 Tbsp. cornstarch
1 tsp. fresh lemon juice
 
Directions:
 
Preheat oven to 325F.  Remove RAF Almond Nut Crust from freezer and let thaw while you prepare the filling.
 
First, let’s make the raspberry puree.  Combine all raspberry puree ingredients in saucepan on medium heat.  Stir together until thickened and boiling, about 10  minutes.  Strain through a mesh strainer.  Set aside.
 
Next, let’s melt the white chocolate chips.  Combine heavy cream and chips.  Microwave 20 seconds at a time.  Stir.  Microwave another 20 second until melted.  Stir until smooth.  Set aside.
 
For the Cheesecake filling, on medium speed mix together cream cheese, sugar, and sour cream.  Mix for about 3 minutes.  Add eggs, one at a time, then add in melted white chocolate and vanilla.  Mix well.  Pour ½ the batter into thawed almond nut crust.  Place spoonfuls of raspberry puree (about 2 Tbsp.) on top of this mixture.  White knife, swirl to create a marbling effect.  Add remaining cheesecake batter and 2 more spoonful’s of your Raspberry puree.  Repeat swirling. 
 
Bake at 325 for 40 minutes, or until pie “jiggles when you wiggle”. Let cool, then refrigerate for a few hours and/or overnight.
 
Bakers Tips!
* You can make the Raspberry puree ahead and refrigerate until ready to use.  You will have leftover.  Drizzle some on a slice!  Freeze the rest.

Pick up our Non-GMO certified Almond Nut Pie Crust @thefreshmarket and a few more ingredients below and you’re off baking with delight!

⬇️ Recipe ⬇️

Ingredients:
RAF Almond Nut Crust, thawed.
2 Honeycrisp Apples, peeled, cored and sliced.
2 Granny Smith Apples, peeled, cored and sliced.
1/2 cup sugar
1/4 all purpose flour 
2 Tbsp. Fresh lemon juice
2 tsp. Lemon zest 
1 1/2 tsp. cinnamon
1/4 tsp. All spice 
Jar of Salted Caramel Sauce.
1 package refrigerated pie dough. 
1 egg lightly beaten with splash of water
Course sugar to sprinkle. 

Directions: Wash, peel, core, and slice apples 1/4” thick.  Toss apple slices with sugar, flour, lemon juice, lemon zest, cinnamon, and all spice.  Pour into thawed RAF Almond Nut Pie Crust and pack apples down into crust.  Drizzle 1/2 cup of salted caramel sauce over apples. 

Remove dough from refrigerator for about 10 minutes. Meanwhile, watch a you tube video on how to create a pie lattice.  Easier to watch then read 😅. Brush with egg wash and sprinkle with course sugar.

Bake at 400 for 20 minutes, then decrease heat to 375 and bake for another 45-50 minutes or top is golden brown and apples are bubbling.

Let cool for minimum of 4 hours.  This will allow your beautiful pie to set!  Enjoy warm or room temperature with a drizzle of the extra Salted Caramel Sauce.  Mmm Mmm good!!!

Bakers Tips! 
⚪️Cover pie with foil if dough crust is browning too much and still has bake time.
⚪️1 lemon will be perfect to yield your zest and juice.  Zest before juicing!

Baked Apples with Almond Crumb Topping 
⬇️ Recipe ⬇️

Ingredients:
RAF Almond Nut Crust, thawed and crumbled
4-5 Honeycrisp Apples, peeled, cored and sliced.
Juice of 1/2 Lemon (about 1 Tbsp.)
1/2 cup coconut oil, melted 
1 Tbsp. maple syrup
2 Tbsp. cinnamon

Directions: Crumble thawed crust and set aside. 

Wash, peel, core, and slice apples.  Toss apple slices with lemon juice.  Mix together melted coconut oil, maple syrup and cinnamon.  Pour over apples and toss to coat.  Pour apples into baking dish.  Sprinkle RAF Almond Nut Crust crumbs on top. 

Bake at 350 for 35 minutes, then increase heat to 375 and bake for another 10 minutes or until apples are tender and crumb topping is golden brown.  I like it best served warm with vanilla ice cream.

Bakers Tip!  How do you know if your apples are tender?  Check periodically using a toothpick, fork, or cake tester tool to poke through an apple slice.  You want it to be firm, but easy to poke. If you can call an apple “Al Dente” this would be appropriate for this dish 😉

Chocolate Almond Apple Slices are first up! ⬇️ Recipe ⬇️

Ingredients:
1 RAF Almond Nut Crust
1 bag of Chocolate Chips, melted. (Semi-sweet or dark chocolate are my favorite.  Could also use caramel for this recipe too!)
3 Honeycrisp Apples, cored and sliced.
Juice of 1 Lemon

Directions: Crumble thawed crust on a baking sheet.  Bake at 375F for 10-12 minutes until toasted, stirring halfway through.

Wash, core, and slice apples.  Toss apple slices with the juice of 1 lemon to prevent browning. 

Melt chocolate chips in microwave safe bowl, stirring every 30 seconds. 

Now, the fun begins!  Dip each apple slice in chocolate, then pat in toasted, Almond Nut Crust crumbles.  Lay apple slices on a baking sheet lined with parchment paper.  Continue until all apple slices are dipped and coated in nuts.  Refrigerate until chocolate sets and serve when ready!

Bakers Tip!  If the chocolate is not sticking to your apple slices well, pat them dry with a paper towel, then dip in chocolate.
