…Totally Nuts for Pie Crust and Dust

Strawberry & Chocolate Cream Pie (Vegan, GF)


This delicious pie was created and made by Lauren @beyoubewholesome. Her business is so inspiring and her recipes are delicious! She has three cookbooks you can purchase as well. She is a natural in the kitchen and all of her recipes not only taste delicious, but you feel good eating it. We tried this pie and immediately called her to tell her not only how beautiful this pie is, but how much we all loved the taste of it.


1, Ruffled Apron Foods Almond Nut Crust, Pre-baked.

Thin Chocolate Layer:
1 can of Full Fat Canned Coconut Milk or Coconut Cream (refrigerated overnight)
2 to 3 tbsp. Cacao Powder
2 tbsp. Sweetener of Choice (maple, honey, lakanto etc)

Strawberry Cream:
3 to 4 cans of Full Fat Coconut Milk or 2 cans of Coconut Cream (refrigerated overnight)
1/4 cup strawberries, puréed (blended)
1/2 cup shredded coconut
1/4 cup sweetener of choice (same as above)
1/2 cup powder sugar (I used @lakanto)
1/2 Packet of @colorkitchen Pink Packet (not necessary but just makes it more pink)
1 tsp. Vanilla Extract
Pinch of Sea Salt


Thaw Crust while oven preheats to 375F. Place crust in oven to bake for 10-14 minutes or until almonds are golden brown. Let cool.

Start with the chocolate layer first. Take the coconut cream portion from can (pour liquid into a mason jar and use it for smoothies) and with a hand mixer, mix with the other ingredients and layer it on top of cooled cooked pie crust. Place in refrigerator to set while you make the strawberry portion.

Now for strawberry portion, blend strawberries and set aside. Take coconut cream portion from cans (save liquid for something else) and place in a bowl with all ingredients listed above, except strawberry purée and use hand mixer to mix together. Slowly add strawberry purée to bowl..SLOWLY, because if you add too much it will get too liquidity. If you don’t use it all save it for pancakes or a smoothie. Add the pink food coloring if using and mix in. Place strawberry layer on top of chocolate layer and top with strawberries. Refrigerate for at least an hour. The longer it’s refrigerated the better it is. Enjoy!
